Keto coconut slice is a super easy recipe to make, consisting of only 3 ingredients and taking less than 5 mins to prepare. I really don’t see a more convenient way to create a delicious snack or easy keto dessert, unless you literally buy it premade from the shops…. (like that’sgoing to happen). So for the time being, making recipes like this keto coconut slice seriously couldn’t get any easier.

Funny story… so earlier this year, I made some videos. These videos were me making a few different recipes that included “desiccated coconut”. What I didn’t know at the time was how to say the ingredient correctly, so I would say “Desecrated”, which is to treat (a sacred place or thing) with violent disrespect… little did I know I was treating my kitchen with such violent disrespect! I’ve since cleaned up the mess I made whilst treating my kitchen (and recipes) with such violence, and moved on to create a delicious recipe using the CORRECT ingredient. 🙂

This recipe is pretty similar to what I used to make, coconut ice. If you have had coconut ice before, then you’ll understand what I mean. These shots are kinda dark, and bare resemblance to my violent disrespectfor the ingredients I handled throughoutmy videos. It’s hard to dress up something that is so delicious because as soon as I finished photographing them, I ate about 5 of them. I don’t advice you do this, however, because not only do they pack a little calorie punch, but you won’t have any left for during the week to take to work. Then you’ll be sad and take it out on me. Fair warning!

As a community, we can help each other to create great recipes, and provide helpful tips along the way if you are looking for a particular ingredient, or might be wondering if it’s okay to switch butter of something else if going dairy free.

I’ll start the conversation and say that I used a bread loaf tin to mold these coconut slices into a thick, slice type pieces, froze them for an hour or so (it doesn’t take long for the butter to solidify), then sliced with a sharp knife to get those mostly clean edges. You can even rub the outsides with your fingers to make them look extra special, but it’s not necessary.

I keep them in the freezer, and can easily take a bite straight out of the freezer. They are not little rocks 😉 and have a really great texture when biting into them.

Keto Coconut Slice

Keto coconut slice is a super easy recipe to make, consisting of only 3 ingredients and taking less than 5 mins to prepare. Making recipes like this keto coconut slice seriously couldn't get any easier.

  • Place the desiccated coconut into a medium sized mixing bowl

  • Melt the butter, and add the erythritol to the mixture, stirring through

  • Combine the three ingredients, and line a loaf baking tin with partchment paper.

  • Pour the mixture into the tin, and press down firmly all around to create a level top. Freeze for an hour and enjoy.

    Hi, do you know what the difference would be to the nutritional values if using Stevia instead of erythritol? For instance, Stevia doesn’t have any carbs so how would that affect the calories and carb count?

    Hi Aaron. I was wondering if these can be stored in the refrigerator after freezing them for an hour, or do they remain frozen until ready to eat. Thanks!

      Yes of course. I store them in the freezer, and they are ready to eat straight away, but storing them in the fridge if you have less space in the freezer is totally okay as well, they shouldn’t lose their structure.

        Thanks! I made these today and they are dangerously delicious and super easy to make. I used unsalted butter (all I had on hand) and added a little salt to the mix. I’m keeping them in the freezer so they will stay fresh longer (as if they will last that long!)

I recently started keto and I’m trying to ease my way in by not cutting sweet treats entirely- enter Coconut Slice. I’m making them now and realized I assumed it was unsalted butter but it’s actually not specified. Is it salted or unsalted? I’m wondering if I should add salt to my butter. Thanks!

        O.M.G. These are divine! Definitely glad I added the salt as it adds depth to the flavor. Yum yum yum, they taste just like coconut popsicles we had as a kid with bits of coconut in them.
