  • 3/4 cup milk
  • 6 tbsp. unsalted butter, divided

Deep Fried Catfish

  • 4 (6-oz.) catfish fillets
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tbsp. baking powder
  • 1 tbsp. kosher salt
  • 1/2 tsp. cayenne pepper
  • 1 (12-oz.) bottle amber beer
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 2 tbsp. granulated garlic
  • 1 juiced lemon

Baked Catfish

  • 2 (7-8 oz.) catfish fillets
  • 4 oz. butter
  • 4 oz. dry white wine
  • 1 tbsp. lemon juice
  • 1 tsp. chopped garlic
